Baingan Bharta

The large variety of eggplants are in season and you can pick up this local produce from our Goan vendors at the market. I made a quick and easy Baingan bharta served with Poi bread. Enjoy! #eatlocalproduce#growlocal #supportlocalbusiness

Egg Plant – 1 large size
Tomato – 1 chopped
Coriander – finely chopped
Mustard sees – 1/2 teaspoon
Green chillis – 3
Garlic – 4 cloves chopped
Curry leaves- 5-6
Tumeric & salt

Method: Roast the large eggplant on the burner till charred from outside. Peel and mash to pulp in a bowl. Pour oil in a hot pan, fry the mustard seeds. After they pop add green chilies, Curry leaves, chopped garlic till brown. Add the mashed eggplant, tumeric and salt to taste. Mix well and turn of the heat. Serve in a bowl and mix chopped raw tomato, sprinkle ample coriander for flavour and garnish.
