Banana cake with Lemon Icing

My all-time favorite leisure activity is baking. With simple ingredients to work with, one could make wonders. This week, to my luck I had some over ripe bananas lying around. What better to make than a banana cake!! To top it off I added a lemon icing… What a perfect match… Try it out and see for yourself… Happy baking this weekend!!!


Banana cake with Lemon Icing


Butter – 250gm

Sugar – 1 ½ cup

Eggs – 4no.

Vanilla essence – 2tsp

Banana – 4no.

Baking Soda – 2tsp

Hot milk – ½ cup

Refined flour – 3 cups

Baking powder – 2tsp


For Icing:

Butter – 50gm

Icing sugar – 3 cups

Lemon juice – 3tbsp

Hot water – ½ tbsp.



Preheat your oven to 150°C. Line a 1kg cake tin with butter paper.

Beat butter and sugar until creamy. Beat in eggs, one at a time & add in the vanilla.

Dissolve baking soda in hot milk, add to mixture and stir to combine.

Sift in flour and baking powder. Slice up the bananas & mix into the flour. Fold gently into mixture using a big spoon and a large scooping action to keep the mixture light. Do not over mix.

Spoon mixture into the baking tin. Bake until a skewer inserted in the centre comes out clean and the top is springy to the touch. One large cake will take 50-60 minutes; allow 45-55 minutes for medium cakes and about 20 minutes for muffin-sized cakes.

Allow to cool in the tin and then turn out & ice when cool.

To make the Lemon Icing, beat together butter, icing sugar, lemon juice and hot water until creamy. Spread over cake!!
