Basil Hummus

One of the most popular dishes in the middle east is definitely hummus, savoured with appetizers, main course or even wraps and snacks. Here’s my twist on this quick dip giving it a wee bit of extra intensity.



Chick peas – 0.5 kg

garlic- 10 cloves

basil- 40 leaves

olive oil – 0.5 liter

lime juice: 2 limes

tahini- 3 tablespoon

paprika for garnish

salt & pepper to taste

olives for garnish


Step 1: Collect mise en place

Step 2: soak the chick peas overnight in water

Step 3: boil the chick peas in salt water till slightly overcooked

Step 4: Once cool blend chick peas with basil, lime juice, garlic, salt, pepper and tahini

Step 5: serve in a bowl topped with olive oil, and garnished with paprika and olives
