Breaded Snapper

This rustic Mediterranean way of cooking fresh fish is easy to cook with simple ingredients, exciting with burst of fresh flavours and healthy as we need just a tea spoon of oil in the entire dish.



Snapper fillet – 3no.

Bread crumbs – 1/2 cup

Garlic – 5 cloves

Parsley – 2 tsp (chopped)

Basil – 8 leaves

Salt & pepper – to taste

Dil – 1 tsp (chopped)

Lime juice – 2tbsp

Parmesan cheese – 2tbsp



Olive oil – 1tsp

Garlic – 2 cloves

Onion – 1/2 no.

White wine – 60ml

Flour – 1 tsp

Fish stock – 1 cup

Dil – 1tsp (chopped)


  1. Begin by collecting your ingredients. This is called mise en place.
  2. Wash & pat dry the fillet of fish. Marinate the fish with lime juice, dill, salt & pepper. Leave aside for about 10 min.
  3. To make the crust, in a blender, blend together the parsley, garlic, basil, parmesan cheese & bread crumbs. Blend to form a light powder. Add a bit of salt.
  4. Dust each fillet of fish well with the bread crumb mix & place in a greased baking pan. Bake in a pre heated oven at 200*c for 10 min.
  5. For the sauce, sauté the onions & garlic in a frying pan with a tea spoon of olive oil. Once the onions turn translucent, deglaze the pan with the white wine & simmer for 2min. Add in the flour & sauté for a minute. Finally add the stock & mix well to get a creamy sauce. Strain the sauce & add the chopped dill & season. Drizzle the sauce over the fish & serve..
