Finger Millet (Ragi) Pancakes with Banana & Strawberry

A perfect breakfast would be incomplete without pan cakes. So easy, that I made pancakes even when I was in primary school & helped myself to generous amounts of chocolate sauce. Here’s my power packed twist using Finger Millet to make wholesome Ragipancakes. Enjoy!

Finger Millet (Ragi) Pancakes with Banana & Strawberry

Ragi Flour – ½ cup

Maida – ½ cup

Baking powder – ¾ tsp

Salt – ¼ tsp

Egg – 1no.

Milk – ¾ cup

Butter – 2tsp

Banana – 1no.

Strawberry – 10no.

Honey – 2tbsp

Chocolate sauce – 2tbsp

Whipped cream – 3tbsp

Chopped cashew nuts – 1tbsp

1)      Slice the strawberries & banana, on a chopping board, with a sharp clean knife.

2)      In a bowl, mix together the ragi flour, maida, salt & baking powder. Add in the egg & milk, and whisk gently to a smooth batter. Remember the batter has to be of pouring consistency.

3)      On a medium heated pan, add the butter & pour equal amounts of batter to get round pancakes. Remember, this has to be done at one go. So pour slowly so the batter spreads evenly. Once you see bubbles forming on the top of each pan cake, flip over to the other side for about 2 min. once done take off the pan.

4)      Begin layering the pan cakes by placing one pancake on the plate, followed by a spoon of whipped cream & then lay the strawberry & banana slices, followed by the next layer & so on.

5)      Once you reach your 4th layer, garnish the pan cake with a blob of whipped cream & place the remaining fruit on top. Pour honey & chocolate sauce on top & sprinkle with some chopped cashew nuts.
