Focaccia

Seems to me that a lot of you guys love baking. Back by public demand, this week a new bread!! This time another favourite of mine. Focaccia, an Italian wholesome bread. I could eat this as it is all day!! Try it and see for yourselves!!

Ingredients:
Flour 1kg
Water (at room temperature) – 625ml
Yeast – 15gm
Sugar – 2tbsp
Salt – 5gm
Olive oil – 60ml
Onion sliced – 1no
Tomato sliced – 1no.
A few sprigs of rosemary & thyme

Method:
Sieve the flour & mix in the salt & sugar, keep aside. In a bowl, mix some water and yeast together to form a liquid. Add it to the flour & knead to a smooth dough. Add in some of the oil. Once the dough is soft, place it in a bowl & cover with a wet muslin cloth for about 20 min or till double in size.
when the dough has risen, dust some flour lightly on the table. Knead the dough once roughly to push out the air formed in the dough & spread in a greased baking trey evenly & prick lightly with a fork so that no air pockets are formed. In a bowl, mix together the remaining oil, onion, tomato, rosemary & thyme & sprinkle over the dough evenly. Rest the dough again for about 10 min. Bake in a pree-heated oven at 210*C for 10-15 min or till golden brown. Brush the bread with some oil as soon as you take it out of the oven to get that awesome golden look!!
Note: it tastes super as it is, or even with a dash of extra virgin olive oil.
