Grilled Chicken Salad

With the growing demand for healthy nutrition, we chefs have started to look at food from newer angles. Eating healthy is important if one wishes to stay healthy.  Here’s my take on a simple grilled chicken salad.

Olive oil – 2tbsp

Butter – 10gm

Onion (sliced) – 1no.

Garlic – 8 no.

Celery (chopped) – 3 tbsp

Fresh Thyme – 1/2 tsp

Orange pumpkin – 250gm

Potato (chopped) – 1/2 no.

Bacon (chopped) – 30gm

Cream – 2tbsp

Parsley (chopped) – 1 tsp

Salt & pepper – to taste


1)      Break the lettuce into bite size pieces, mix & wash thoroughly in ice cold water & strain.

2)      Split the chicken breast into a butterfly. Marinate with olive oil, salt & pepper. Leave aside for 10 min.

3)      On a hot pan, grill the chicken on either side till golden colour. Once grilled, take the piece of chicken off the pan & let it rest on a cool surface for about 5 min. Chop into cubes & keep aside.

4)      For the dressing, in a bowl, mix together the mayonnaise, vinegar, Tobasco & ketchup.  Add a dash of salt & pepper to taste.

5)      Finally, combine the dressing in a bowl with the lettuce & chicken cubes. Give it a good toss so that the dressing coats evenly. Add in the cherry tomatoes & serve cold.!!
