Mint & Cardamom Phirni

Eid Mubaraq to all!!! On the occasion on Bakri Eid, I decided to make Phirni, a desert with a little tweak of my own. Have it warm or cold. Give it a go.. Enjoy!!

Mint & Cardamom Phirni
Milk – 1lt
Rice – 75gm
Cardamom (ground) – 1 ½ tsp
Sugar – 300gm
Ghee/ clarified butter – 2tbsp
Nuts – 30gm
Mint leaves (chopped) – 30gm

Pulse the rice in a grinder to resemble broken rice. In a heavy bottom pot, add in the ghee or clarified butter. Once the ghee melts, add in the broken rice and roast for a minute. Add in the milk, cardamom & sugar. Keep stirring slowly so that the rice doesn’t burn at the bottom. Roast the nuts in a pan with half a spoon of ghee, remember to keep tossing the nuts or they will burn quickly. This will keep the nuts crisp & crunchy. Once roasted, take off the pan & cool the nuts before chopping them.
Once the rice is cooked, take off the gas and cool a bit. Add in the roasted chopped nuts & chopped mint leaves & give one last stir. Serve in flat earthen saucers.
