Mulberry, lime & mint Jam

This week, my friend Dhruv from Porvorim was overjoyed to post pics of his bumper crop of mulberries. After seeing them, I said to my self.. Mmmm mulberry jammmm.. This is what I made. A simple, delicious organic, homemade jam.. Try it out and let me know what you think!!
Mulberry, lime & mint Jam

Mulberry – 300gm
Sugar – 80gm
Lime juice – 1 no.
Mint leaves – 3gm (chopped)
Water – 50ml
Salt – to taste

Wash mulberries well and place in heavy bottom pot. Add in all the ingredients and bring to a boil, stirring regularly with a wooden spoon. Once boiling, reduce heat and cook for about 40min or till mulberries turn mushy. Take off the gas and cool. Store in a glass jar, refrigerate.
