Niçoise salad

Pronounced as ‘Neeswa’ the Niçoise salad is simple yet elaborate, made with French flavors and healthy to the core. The light vinaigrette dressing binds all the fresh flavors of this classic French dish.nicoise_salad (1)



For the Vinaigrette

Lemon juice or white vinegar – 2tbsp

Extra-virgin olive oil – 6tbsp

Finely chopped spring onion – 1 tbsp

Thyme – 1tsp

Dijon mustard – 1tsp

Salt and freshly ground black pepper – to taste


For the Salad

Tuna – 40gm

Egg – 2 no.

Potatoes – 2 no.

Salt and freshly ground black pepper – to taste

Boston lettuce – 1 no.

Cherry tomatoes – 10 no.

Onion – 1 no.

Green beans – 10 no.

Pickled olives – 6 no.


1)      Begin the recipe by collecting your ‘mise en place’.

2)      Boil the eggs in water for about 12 minutes or till hard boiled. Cool & peel.

3)      Wash the potatoes & boil in salt water with skin on. Also follow the same with the beans. Once cooked cool and keep aside.

4)      Combine all the ingredients of the dressing in a bowl & whisk well to form a creamy smooth dressing.

5)      Finally assemble all the vegetables, tuna, boiled eggs & lettuce on to a bowl with roundels of onion. Serve with the dressing on the side.. Voila!!
