Paprika infused Roast Chicken

A friend of mine asked me to put up a recipe of a simple roast chicken. Knowing his skills in the kitchen, I decided to do an extremely simple recipe with basic ingredients. One could play with flavours even with just 3 ingredients!! Let me know what you think!!



 For the Roast

Chicken Leg – 1no

Ginger paste – 1tsp

Garlic paste – 1tsp

Paprika or Kashmiri chilli powder – ½ tsp

Lime – ½ tsp

Salt & pepper – to taste

Oil – for searing

For the Mash

Boiled potato – 1no.

Cream – 1tsp

Butter – 1tsp

Salt & pepper – to taste

For the salad

Mixed salad leaves – 1 hand full

Vinaigrette dressing – 2tbsp


1)      Wash the chicken leg under running water & dry using a paper towels. Make slits on the leg, so that the leg marinated easily. Add in all the ingredients, give it a good mix, & let te leg marinade for about 6 hours.

2)      Wash the salad leaves & drain excess moisture. Drizzle over with vinaigrette dressing &its ready.

3)      Boil the potatoes, skin off in water with some salt. Once cooked, strain & cool the potatoes. Using a fork, mash them, and set back once again on the heat, adding the cream, butter & seasoning. Keep stirring till all the cream has been absorbed.

4)      On a hot pan, sear the chicken leg on both sides, thus trapping the moisture inside & keeping the leg moist. Once done, about 4 min, transfer to a pree heated oven & cook for 15 min, at 190*c.

5)      Serve with a side of bread & enjoy!!
