Prawn & Cheddar cheese Ressois

One of the most loved goan snack has to be the famous Prawn Ressois. I for sure can gobble at least 6 before I even feel like I had one!! With the multiple textures experience on every bite, it makes a super snack. Try my version; Prawn & Cheddar cheese Ressois.. Have a great weekend everyone!!

Prawn & Cheddar cheese Ressois



For the cover:

Flour – 240g

Water – 2 cups

Salt – 1/2 tsp

Butter – 1 tbsp

For the filling:

Garlic (chopped) – 2 tbsp

Celery (chopped) – 2 tbsp

Onion (minced) – 2 tbsp

prawns (chopped) – 300gm

White wine – 30 ml

Olive oil – 2tbsp

Cheddar cheese (grated) – 75gm

Gouda cheese (grated) – 75gm

Parsley (chopped) – 1tsp

Salt & pepper – To taste

For frying:

Oil – 1/2 ltr

Egg – 2no

Bread crumbs – 1cup

Method: For the filling: Add the oil to a non stick pan on slow flame. Add in the garlic & celery, & sauté. Add in the onion & prawns & continue sautéing till prawns are cooked. Degrease the pan with the white wine & take pan off the heat. Once this mix is cool, stir in both the cheese. Add seasoning to taste. Finish by sprinkling the chopped parsley.

For the cover: Pour water in a pan with the salt and bring to a boil. Add in the butter, lower the heat and slowly add in the flour. Stir with a wooden spoon till it forms a smooth ball & Remove from the heat. Allow the ball to cool enough so it can be handled, kneading well.Roll out the pastry about 8mm thick. Cut round circles about 4 inches in diameter.Place one teaspoon of the filling on each round cutout, fold over and moisten with water to seal.Heat the oil in a deep frying pan. Dip each rissois in the beaten egg; roll in bread crumbs and deep fry till golden brown. Drain on a paper towel and serve hot.Note: watch out for the cheese. It will resemble molten lava!!!
