Rustic North Indian food originated from Dhabas on highways, catering mostly to truck drivers. Dhaba food has found its rightful place in gourmet restaurants like Yellow Chilli, Porvorim. Inspired by the famous Puran Singh’s dhaba, here’s one fabulous recipe.



Refined oil – 2tbsp

Chicken leg – 100gm

Green cardamom – 4no.

Cloves – 4 no.

Black cardamom – 2 no.

Bay leaf – 1 no.

Black pepper corn – 1/4 tsp

Chicken stock – 1 1/2 cup

Dhania powder – 1 tsp

Jeera powder – 1 tsp

Haldi powder – 1 tsp

Puran singh masala mix – 1 tsp

Chilli powder -1 tsp

Onion sliced – 1 no.

Tomato puree – 1 cup


  1. Collect all your ingredients. This is called mise en place.
  2. Add the oil to a pan & place over a medium heat till the oil heats up.once hot, add the whole spices, i.e. Cardamonm, cloves, bay leaf & pepper corns. Let them roast till the oil absorbs the flavor. Add in the sliced onion & sauté till brown. Aff in the tomato puree & cook for a further two minutes.
  3. Once the tomato puree cooks, add in the powdered spices, salt & pepper. Mix quickly over high heat till the oil begins to separate from the gravy. At this point, add in the chicken stock.
  4. Add in the chicken pieces & simmer till the chicken is cooked.
  5. Serve with juliennes of ginger!!
