Quinoa Salad

Keeping up with Lent, here’s a simple recipe made from Quinoa (pronounced  keenoa) , a great protein substitute and replacement for wheat or rice in our day to day lives. Not only does Quinoa have a high nutritional composition but is versatile and very simple to cook.



Quinoa – 100gm

Yellow bell pepper – ¼ no.

Red bell pepper – ¼ no.

Celery – 3 stems chopped

Orange zest – 2tsp

Parsley – 1tbsp chopped

Spring onion – one chopped

Bean sprouts – 3tbsp

For the dressing:

Extra virgin olive oil – 2tbsp

Orange juice – 3tbsp

Vinegar – 1tsp

Salt & pepper – to taste


  1.       Begin the recipe by collecting all your ingredients. This is called ‘Mise en place’
  2.        Wash the Quinoa and add to a pot of boiling water. Add some salt to taste. Cook for about 20 minutes or till done. Once done, strain the Quinoa & keep aside.
  3. While the Quinoa is cooling, chop all the vegetables
  4.     For the dressing, whisk together the olive oil, orange juice, vinegar, salt & pepper.
  5.        Finally in a large bowl, combine all the ingredients, i.e. the chopped vegetables, Quinoa & drizzle in some of the dressing. Taste & add seasoning if required. Serve & garnish!!
