Stuffed chicken breast

Italian flavours are generally very basic and simple, although one needs a little bit of understanding about bringing the flavours together. Here’s a simple 5 step recipe to inspired by Trip of Calangute



Chicken breast – 1no.

Garlic minced – 1/4 tsp

Oregano – 1/4 tsp

Rosemary – 1/4 tsp

Thyme – a pinch

Chili flakes – a pinch

Salt – to taste

Crushed Pepper – to taste

Grated cheese – 20gm

Spinach – 30gm

Button Mushrooms – 4 no.

Arborio rice – 20gm

Cream – 1/2 cup


  1. Begin your recipe by collecting & prepping the ingredients. This is called ”mise en place’
  2. Marinate the chicken breast with a drizzle of oil, garlic, thyme, chilli flakes, salt & pepper. Let it rest for about 2 hours.
  3. For the stuffing, sauté the mushrooms, spinach & leave aside. Once cool add in the cheese & stuff it into the chicken breast.
  4. To a medium hot pan, add some oil. Grill the chicken breast on either side for about 3 min each or till done.
  5. Serve the chicken breast over wilted spinach, creamy arborio rice & garnish!!
