‘Sarswat’ is a native cuisine of Goa and has a lot to offer to the contemporary gourmet food scene. The flavours of these native and local ingredients will transport you to a bygone era, inspired by Voltaire at Ries Magoz.



Clams – 150 gm

Besan – 3 tsp

Tamarind sauce – 2 tbsp

Onion – 2 no. Chopped

Green chilli – 2 no chopped

Coriander – 3 tbsp

Grated coconut – 1 no

Turmeric – 1 tsp

Chili powder –  1 tsp

Garam masala – 1 tsp

Rawa – for coating

Coconut oil – for frying

Salt – to taste


  1. Begin the recipe by collecting your ‘mise en place’
  2. In a large bowl,mix together the coconut, chopped onion, chopped green chilli, chopped coriander, dry spice powders, tamarind, besan and flesh of the clams & mix well. Add salt to taste. Add about a cup of water and mix to form patties.
  3. Once patties are made, roll or coat each patty in semolina.
  4. To a hot pan, add the coconut oil. Fry for about a minute and half on each side over medium flame or till golden brown.
  5. Serve hot on a banana leaf with Goan salad & Enjoy!!
